– Cauliflower steak & tabbouleh –
Great meal for early on in the week to make a few meals with roasted veg and tabbouleh. Chunky piece of cauliflower, made 3 or 4 from a large and roasted up the other florets.
Tabbouleh has different recipes online and here are my ingredient list:
• Couscous (usually bulgar wheat) cooked
• Diced red onion
• Diced cherry tomatoes
• Chopped parsley
• Chopped mint
• Extra virgin olive oil
• Squeeze of one lime
• Salt and pepper
Mix it al together in a bowl and portion it up for the week. Easy to make and sometimes a small bowl as a snack is great towards the end of the day. Add some chilli if you enjoy the heat.
For the cauliflower, cut in to chunky slices for the steaks and shallow fry with spices. A small amount of coconut oil, garlic, paprika, cayenne pepper, cumin, salt & pepper. The remaining florets of cauliflower I threw in the oven with the beetroot.
The beetroot was peeled and quartered, small amount of salt and oil and in the oven for 200/220C for 20/30 minutes or until softened.
It’s surprising how filling this is. Loads left over but you know you’re avoiding processed foods. It’s easy to get carried away with the oil so a lot of people seem to measure it out when roasting veg, personally I find that too much.
