– Allspice Lentil Curry –
Another one pot. Easiest way to cook and quickly build on flavours with such little effort.
Recipe: fry off garlic, red onion, curry leaves, ginger, star anise, chilli, chopped tomato and all spice. Add red lentils, coconut milk and then fill the tin will boiling water to add in. Cover and stir often, adding water if it’s looking dry. Put some chopped broccoli in until softened and finish with kale.
A one pot cook that I often cook but sub out the different veggies if there’s anything you don’t like.
