Beetroot dip

– Baked beetroot dip –

All ingredients in the a blender and serve up. Basically a tzatziki without the yoghurt. Toasted pittas to dip.

Ingredients: baked beetroot, onion, garlic, garlic, ginger, cider vinegar, paprika, coconut oil, basil, lime juice, salt, pepper, chilli flakes.

Absolutely love beetroot! I’d like to find some golden beetroot which I’m sure I’ll find down the markets at the weekend. Any roasted veg can be made in to a dip though. Any favourites?
