Basil & Cashew Pesto

– Basil & Cashew Pesto –

Basil is possibly my favourite herb as I love the flavour. This simple recipe can be mixed with pasta or used as a dip for homemade fries (Sweet potato fries).

Soak some cashew nuts overnight in water. It helps to soften them which is crucial for the texture of the pesto. Then blitz the nuts, a bunch of basil leaves, a couple cloves of garlic, olive oil (or coconut), lime juice, salt & pepper. I put it in my kilner jar as leaving it overnight helps the flavours build.

If you enjoy other herbs, switch out the basil for them.
