– Squash & red lentil dhal –
I cook this all the time! Delicious and straight forward recipe.
Fry off chopped garlic, ginger, mustard seeds, chilli, onion and spices. I use turmeric, cumin and paprika. Add in a medium chopped squash (small chunks to be mashed in once soft enough). Then add about 300g of red lentils to the pan. Add about a litre of boiling water and simmer for 30/40 mins.Keep stirring and you’ve created deliciousness. Top up with more water if it starts to dry out. Add some chopped spinach and seasoning after taking off the heat.
No need to pre soak the lentils and you can replace the with yellow, puy, green or brown but cooking times can change. I often use green but you don’t get as rich a colour. Vary the heat as well with the amount of chilli you use. Experiment with it, your worst home cooked meal is better than any processed food. Mistakes are the learning opportunity that makes your food better.
A simple recipe that goes with rice, chapati, naan or just on it’s own. Refrigerating for the days after only makes it tastier.
